Barkham Blue

This distinctive blue is produced by Two Hoots Cheese in Berkshire. Two Hoots is a small family business.  After a life immersed in all sorts of farming and animal care (including looking after rescued owls – hence the dairy name!) Sandy Rose perfected their most popular cheese – the Barkam Blue -  in 2003.  Sandy, her husband Andy and their daughter Nia have been making their cheeses and winning numerous awards for the Barkham Blue in the ensuing years. This gorgeous cheese owes its dense, buttery richness to the pasteurised Channel Islands milk with which it is made.

 

Barkham Blue is comes in an ammonite shaped round and is covered with a natural mould ripened rind.  The rounds are matured for 5 – 6 weeks. The interior of this cheese is a moist yellow with dark blue-green veining. Overall, the flavour is one of a mellow blue; creamy, buttery, with a hint of spice.  And it melts deliciously in the mouth!

    Our cheeses will arrive to you wrapped in a waxed paper, this allows for it to breath keeping it in the best condition for consumption. If you plan on keeping your cheeses for longer, remove from its wax paper and wrap in cling film.
