Baron Bigod

This is the only traditional raw milk Brie-de-Meaux style cheese made in Suffolk.  And it is one of only a few Brie style cheeses in the world that is still made by the farmer, on the farm.  Fen Farm Dairy, Suffolk are justifiably proud of making a superb cheese to a traditional recipe from a French cheese maker. 

 

From a creamy/silky rind to a crumbly centre, this cheese has lasting, earthy, even mushroomy, flavours. These are imparted to the cheese via the milk from the rich area of grasses and herbs that are unique to the Stow Marsh fen in the Waveney Valley.  The cheese is made in small batches every morning with milk still warm from the cow.  The mould cultures are added and it is gently gravity fed into small vats just a few metres from the milking parlour, where the rennet is added. The curds are carefully hand-ladled into large moulds The young cheeses are hand salted and then aged for up to 8 weeks in a cave-like environment. There is a strong focus on keeping this cheese as close as possible to the way a true Brie has been made traditionally. Every step of the way this cheese is hand made using only authentic tools and methods.  This is what gives Baron Bigod its smooth, delicate and silky texture and complex, long lasting flavours.  A proudly local, artisan cheese.

    Our cheeses will arrive to you wrapped in a waxed paper, this allows for it to breath keeping it in the best condition for consumption. If you plan on keeping your cheeses for longer, remove from its wax paper and wrap in cling film.
