This beautifully creamy, tangy semi soft blue, has been made by hand on the same 200 acre farm in Beechmount, CoTipperary since 1984. Now in the hands of the 2nd generation the cheese more than fulfils its creators' (Louis and Jane Grubb) aim to create an Irish farmhouse blue that “truly represents the outstanding quality of Tipperary grass-fed milk.”
At between 6 and 10 weeks aged, Cashel Blue is firm but creamy edged and has a blue flavour which is deliciously fresh and tangy. It will age well up to 3 months, but it is as a fresh blue that you will enjoy this cheese at its mouth watering best. This cheese has a full and rounded character subtle rather than strong.
