Langres

Having almost disappeared in the 20th century, Langres has been revived using the traditional recipe.  This aromatic cheese is made just ouside the market town of Langres in the Champagne-Ardenne region of France, and was granted AOC designation in 1919.

 

It is brushed with the local eau-de-vie (grape brandy)  this causes the characteristic orange bacteria to develop on the rind.  This breaks down the lactic, chalky core to give a rich, sumptuous cream-line and deep flavour.  Aged for 8 weeks it is truly creamy and luxurious, with a hint of alcohol!  The characteristic dimple in the top is caused by the fact that it is only turned once during production, giving it a tendency to sag in the middle.

    Sold as a whole cheese, aproximately 180g in weight 

    Our cheeses will arrive to you wrapped in a waxed paper, this allows for it to breath keeping it in the best condition for consumption. If you plan on keeping your cheeses for longer, remove from its wax paper and wrap in cling film.
