Vintage Lincolnshire Poacher
This cheese is made by Tim and Simon Jones at Ulceby Grange Farm, near Alford, on the edge of the Lincolnshire Wolds. It shares many of the characteristics of a traditional West Country cheddar, but has also been compared to a French Gruyere.
Only one batch of this cheese is made daily, and, as the herd of 230 Holsteins graze on fresh grass (from pasturelands that have been maintained organically for in excess of 10 years) each batch can have slight variations in colour, texture and taste.
The cheese matures for between 18 and 22 months bringing out its complex, deep flavour. Smooth and strong with a fresh, lingering aftertaste. For sheer versatility this cheese is almost unmatchable. If you can resist nibbling, it also cooks wonderfully. It keeps very well in the fridge and even freezes well.
