Selle Sur Cher
Selles sur Cher is a classic French goat's milk cheese - dense and velvety in texture. It has an aroma and flavour of walnuts closely follwed by a creamy lemony tang. It is still made to its traditional recipe, matured in truncated cyclindrical discs and lightly coated in ash. The ash was traditionally applied to preserve the delicate cheese, also in eating, the ash helps cut through the dense creaminess of the goats cheese. Many modern goats and sheep's milk cheeses use this same technique.
Selles sur Cher was one of the first cheeses to gain a protected status in 1975, which was then modified in 1980. The Protected Designation of Origin (PDO) of the cheese guarantees the region of production and traditional techniques used to make it. After the cheeses have been made, they are then matured for three weeks in a dry cellar.
The Cher river runs parallel to the Loire, home of world renowned Sauvignon Blanc that is fresh, bright and grassy. These wines match perfectly the bright lemony flavours of this cheese.
Sold as a whole cheese. Aproximately 150g in weight.
