This beautiful Red Leicester cheese is made to a traditional recipe using unpasteurised cows milk from local Leicestershire dairy herds. A classic!
Clothbound with lard, it is ripened for 6 months on beech shelves within the dairy. The flavour of this cheese is deliciously complex: fully rounded and rich, both savoury and mellow, firm but moist.
