A complex palate combining both sweet and savoury give this traditional Spanish cheese its distinctive refined taste. The firm but buttery texture is a vehicle for nutty, herbaceous flavour notes. Ours is aged for a minimum of 6 months and tastes superb when paired with a delicate membrillo.
